chicken salad (first time I've made really)

It was another day just slightly under the sleep trumped the elliptical.  But an early night tonight and a chance to sleep in tomorrow...are two great things that taste great together!

Breakfast: 2 coffees with skim milk, a fried egg and 2 turkey sausage links.

Mid-morning snack: apple w/1 TBS peanut butter (could be my new favorite snack!)

Lunch: chicken salad (the diced chicken and celery was coated in leftover tastefully simple spinach and dill dip which was a combo of mayo and greek yogurt.) It was delicious!  I can't wait to try it with the smoked paprika and garlic dip.  7 whole grain crackers and some strawberries.

Late-afternoon snack: South Beach protein cereal bar. 

Dinner: Leftover chicken sauteed with mushrooms...I wasn't too hungry because of the late afternoon snack. 

During choir I sipped some acai herbal tea....and now I'm curled up with some sugar free hot chocolate and an episode of Buffy.  A good way to bring this day to a close. 

Looking forward to a day off tomorrow and a chance to get some of this dust (from all the drywall work) off the floors!
